Remove the stems from the eggplants and cut them into quarters lengthwise. Then cut them into 1.5 cm wide pieces. Cut the cucumber into similar-sized pieces. Sprinkle salt over both and let them sit for about 5 minutes. Squeeze out excess water once it has released some.

Cut the myoga into thin slices.

In a bowl, mix the miso and mustard paste, then combine with the eggplant and cucumber mixture from step 1 and the sliced myoga from step 2.
