Start by cutting white cremini mushrooms into slices, not too thin or thick, using a large quantity.
Transfer the sliced mushrooms to a plate and set aside.
Peel and slice 3 large red onions into half moons.
In a pan, drizzle 2 to 3 tablespoons of olive oil and add the sliced onions, sprinkling a little salt to help them sweat.
Mix the onions and break them up for texture, cooking for about 2 minutes.
Add the sliced mushrooms to the pan with the onions and mix well.
Add thyme to the mixture, allowing the heat to release the leaves from the stem.
Chop 4 to 5 cloves of garlic and add them to the pan, mixing everything until golden.
Let the mushroom mixture cool down before using it on the dough.
Take one pack of phyllo dough (usually containing two packs) and lay down two sheets on a baking sheet lined with parchment paper.
Spray avocado or grapeseed oil on the phyllo sheets and repeat the process with another two sheets, rotating them to create a strong base.
Spread the cooled mushroom mixture in the center of the phyllo dough.
Fold the sides of the phyllo sheets to create a frame around the mushroom filling.
Season the filling with salt and pepper to taste.
Strip fresh thyme leaves from the stem and add them to the filling.
Add date syrup for sweetness to the mixture.
Spray the frame of the dough with oil to keep everything together and enhance color.
Sprinkle sesame seeds on the border of the pie for texture.
Bake the pie until golden brown and crispy, then let it cool.
Remove any dry thyme from the pie and sprinkle fresh thyme for presentation.
Cut the pie into squares using a pizza cutter, deciding the size of the squares based on preference.
Serve warm and fresh, optionally garnishing with fresh parsley or arugula.
