Jambalaya Soup

1 lb cajun style sausage
4 cups chicken broth
1 can (14.5 oz) tomatoes with chilies
1 can (10 oz) Rotel
1 medium onion
2 celery stalks
2 tsp Tony Chachere's Creole seasoning
to taste salt
4 cloves minced garlic
2 tbsp tomato paste
1 cup white rice
1 cup corn
1 lb large shrimp
1/4 cup chopped parsley

Set Instant Pot to sauté function.

Brown cajun style sausage for about 4 to 5 minutes.

Add chicken broth, tomatoes with chilies, Rotel, onions, celery, Tony Chachere's Creole seasoning, salt, minced garlic, and tomato paste to the pot.

Stir to blend all ingredients well.

Add washed white rice (or brown rice if preferred) and stir again.

Cover the Instant Pot and cook for the instructed time (check the recipe for details).

After cooking time is done, release the pressure.

Let it sit for a little bit and then add corn (Green Giant white corn preferred).

Add large shrimp and tuck them in to ensure they cook through.

Let it sit for about 5 minutes and check that the shrimp is opaque to confirm it's cooked.
