Score the skin of the pork belly in a crosshatch pattern.
Rub salt and black pepper generously over the pork belly.
Place the pork belly in a pan skin-side down and cook over medium heat until the fat renders, about 10-15 minutes.
Flip the pork belly and cook until the skin is crispy, about 10 minutes more.
Remove the pork belly from the pan and let it rest on a cutting board.
Meanwhile, add butter to the pan and sauté chopped garlic and onion until fragrant.
Add diced potatoes to the pan and cook until golden and tender, about 15-20 minutes.
Season the potatoes with salt, pepper, and fresh thyme.
Slice the rested pork belly into bite-sized pieces.
Serve the crispy pork belly with the sautéed potatoes and garnish with parsley and lemon wedges.
