Jamaican Stewed Mutton with Turn Cornmeal

Traditionally prepared for special occasions and family gatherings, it showcases the use of bold spices and fresh ingredients, creating a hearty and flavorful meal. Quinoa provides protein while being gluten-free.
Clean mutton with vinegar or lime to remove any sediments.
Season mutton with dark soy sauce, beef bouillon, scotch bonnet pepper, thyme, ginger, garlic, scallion, and pimento seeds. Marinate for at least 1.5 hours, preferably overnight.
Heat coconut oil in a large pot.
Add marinated mutton to the pot and brown for about 10 minutes.
Remove mutton and add carrots, red onions, tomatoes, scallion, and bell peppers to the pot.
Add more beef stock to the pot and return the mutton.
Add coconut milk and let simmer on low heat for 45 minutes to an hour.
Prepare turn cornmeal by heating coconut oil in another pot.
Add red onions, scallion, tomatoes, bell peppers, and pumpkin to the pot.
Mix coconut milk and water, bring to a bubble, and add margarine.
Slowly whisk in yellow cornmeal, stirring constantly to avoid lumps.
Cover the pot and check every 5 minutes, stirring to prevent burning.
Check the mutton for tenderness after about 15-20 minutes of simmering.
If the turn cornmeal gets too dry, add more coconut milk slowly.
