5 garlic cloves
¼ cup red wine vinegar
¼ cup lemon juice
¼ cup olive oil
2 tablespoons fresh oregano
1 bunch parsley
1 bunch cilantro

Season the steak with salt and pepper on all sides.

Preheat a cast-iron skillet to medium-high heat. Add the canola oil and heat until it shimmers. Add the steak and cook until one side is dark brown and forms a crust, about 5-7 minutes. Flip and cook the other side for another 5-7 minutes. Remove the steak and set aside to rest.

Add the potatoes to the pan, season with salt and pepper, and cook until the potatoes are golden brown, tender, and crispy or bake for 20-30 minutes until tender and crispy. Set aside.

Make the chimichurri sauce by adding the onion, garlic cloves, cilantro, parsley, olive oil, red wine vinegar, lemon juice, and salt and pepper to taste to a blender. Blend until smooth.
