Prepare 8 litres of water in a pot and heat it to 65 degrees Celsius.

Measure out 150 grams of special W malt, 30 grams of chocolate malt, and 150 grams of molasses.

Add the grains to the heated water, stirring constantly to avoid dough balls.

Mash the grains for 60 minutes, maintaining the temperature.

After 60 minutes, turn the heat to maximum to bring the mixture to a rolling boil.

Collect approximately 200 milliliters of wort to reduce it to syrup for flavor enhancement.

Add 7 grams of challenger hops to the boiling wort for bitterness.

Stir the syrup occasionally until it reaches a thick consistency.

15 minutes before the end of the boil, add the molasses and stir to combine.

5 minutes before the end of the boil, add 7 grams of East Kent Golding hops for aroma and flavor.

1 minute before the end of the boil, add all spices (cinnamon sticks, cloves, ginger, nutmeg, orange peel) to the mixture.

After boiling, cool the wort down and transfer it to the fermenter.
