Start by preparing the chicken cutlets, which cook quickly.
Preheat the Blackstone griddle on high, then reduce to medium-high heat.
Add 7 shakes of fish sauce to a mixing bowl.
Add soy sauce and brown sugar to the mixing bowl for sweetness.
Squeeze lime juice into the bowl and mix the sauces together.
Peel the shallot and slice it thinly using a mandolin.
Use a microplane to finely grate the garlic.
Check the chicken on the griddle; it should be golden and cooked through.
Remove the chicken from the griddle once done and set aside.
Cook half the rice noodles in boiling water for about 4 to 6 minutes until tender.
Slice the cooked chicken into bite-sized pieces.
Add vegetable oil to the griddle, then add the shallots and garlic, cooking until fragrant.
Add the cooked chicken back to the griddle with the shallots and garlic.
Pour the sauce mixture over the chicken and vegetables on the griddle.
Add the cooked rice noodles to the griddle and toss everything together until well combined.
Slice the green onions, using the whites for cooking and the greens for garnish.
Add the green onion whites to the griddle and stir everything together for a quick cook.
Serve hot, garnished with the green onion greens.
