150 g flat rice noodles
150 g chicken breast cut into thin slices
1 tbsp soy sauce
1 tbsp garlic powder
1 tsp black pepper
3 shallots thinly sliced
1 red chili cut into thin strips
2 eggs
1/2 onion sliced
3 garlic chopped
150 g firm tofu cut into cubes
1 cup mung bean sprouts
1/4 cup roasted peanuts chopped or crushed
1/4 cup fresh onion chives
salt to taste
3 tbsp soy sauce (for sauce)
1 tbsp tamarind puree
3 tbsp brown sugar
2 tsp fish sauce
1 tbsp lime juice
1 tbsp rice vinegar
1 tbsp ground paprika
1/4 cup water
salt to taste (for sauce)

Cook the noodles according to the package instructions until tender or al dente, drain and toss with a few drops of oil.

Heat oil in a large nonstick skillet over medium heat, slightly fry tofu cubes until lightly browned, about 4-5 minutes, then remove from the skillet.

In the same skillet, heat oil, add chicken and stir-fry until opaque and cooked through, about 5 minutes, then add sliced onion and set aside.

In the same pan, add coconut oil, shallots, and chopped garlic, cooking for 30 seconds.
