Flaxseed meal is a vegan alternative that binds ingredients.
Prepare the dry fruits: 1 cup black raisins, ¾ cup white raisins, ¼ cup chopped dates, and ¼ cup chopped cherries.
Add 1 cup of sugar and ½ cup of room temperature butter to the fruits.
Add ½ tsp orange zest and 1 cup of orange juice; mix well.
Cook the mixture on the stove until the sugar dissolves and the fruits soften.
Add ¼ tsp baking soda to the cooked fruit mixture and let it cool completely.
Caramelize 4 tbsp of sugar on low flame until it changes color, then add 2 tbsp of warm water and let it cool.
In a separate bowl, mix 1 cup of all-purpose flour, 1 tsp baking powder, ¾ tsp spice mix, and 2 pinches of salt.
Once the fruit mixture is cool, add 1 egg and mix well.
Combine the fruit mixture with the dry ingredients gradually, mixing gently.
Add the caramelized sugar syrup to the batter and mix well.
Fold in ¼ cup of chopped cashews and ¼ cup of chopped almonds.
Grease a 7-inch cake tin and line it with butter paper; pour the batter into the tin.
Tap the cake tin to release air bubbles and place it in a preheated oven at 160°C for 30-35 minutes.
If you don't have an oven, bake in a pan or kadai for about 45 minutes.
Let the cake cool completely for about 6 hours before serving.
