500 gram Chicken breast (cut into cubes)
1 tbsp finely chopped garlic
1 tsp grated ginger
1 small spring onion white, sliced
1/2 cup broccoli florets
1 small carrot, chopped
1/4 cup green capsicum, cut into cubes
1/4 cup red capsicum, cut into cubes
1/2 cup onions, cut into cubes
1/4 cup Cashews
1 tsp vinegar (or 1 tbsp lemon juice)
2 tbsp spring onion greens
2 tbsp roasted sesame seeds
3 tbsp Soy Sauce
2 tbsp sweet chili garlic sauce
1/4 cup chicken broth or use normal water
1/2 tsp red chili flakes or red chili powder
1/2 tsp black pepper powder
1/2 tsp sugar
1 tbsp cornflour
1/4 cup water

Combine the ingredients mentioned under stir fry sauce. Set it aside.

Heat 2 tsp of oil in a pan over high heat.

Spread the chicken pieces evenly on it.

Sprinkle some salt & black pepper on the chicken.

Turn the heat to medium.

Cook chicken until golden. Set it aside.

Heat 1 tbsp of oil in the same pan.

Now saute garlic, ginger & white onions for a minute.

Add broccoli & carrots. Cook for 3-4 minutes.

Add green & red capsicum & onion cubes.

Sprinkle salt over it. Stir to combine.

Cook for 3-4 minutes until veggies are crisp.

Add the chicken pieces & cashews.

Stir the sauce before adding it.

Pour the sauce in the pan. Bring it to a boil.

Reduce heat. Let the sauce thicken.

Add tsp vinegar. Or use 1 tbsp lemon juice.

Stir fry sauce is nice & thick, coating the chicken & vegetables well.

Finally, add spring onion greens & roasted sesame seeds. Stir it.
