Slice 1 and 1/2 white onions into a rough chop.
Pour in Miller High Life beer into a pot.
Add sliced onions to the beer.
Sprinkle Tuffy's sweet barbecue rub over the onions and beer.
Add Meat Church blanco rub to the mixture.
Place the bratwurst in the pot with the beer and onions.
Cook the bratwurst on the Recteq for about 1 hour.
After 1 hour, remove bratwurst and cover to keep warm.
Increase grill heat to 350 degrees Fahrenheit.
Spray bratwurst with duck fat to prevent sticking.
Place bratwurst on the grill to sear for 3-4 minutes, checking for desired char.
Remove bratwurst from the grill and return to the beer broth to keep warm.
Toast Martin's hoagie rolls on the grill for about 30 seconds per side.
Prepare toppings: spread Dijon mustard and Heinz mustard on the rolls, add onions, and serve with smoked queso and Josefina chips.
