Add one of each color bell pepper (green, orange, red, yellow) sliced into the slow cooker.
Add two medium onions, thinly sliced, into the slow cooker.
Add two tablespoons of whole grain mustard to the slow cooker.
Add two bay leaves to the slow cooker.
Add two teaspoons of ground thyme to the slow cooker.
Add one teaspoon of rosemary to the slow cooker.
Pour in one cup of beef stock into the slow cooker.
Pour in 14 ounces of stout beer into the slow cooker.
Mix all the ingredients in the slow cooker to combine.
Place the bratwurst into the slow cooker, pushing them down into the mixture.
Cover the slow cooker and cook on low for 6 to 8 hours, stirring occasionally.
After about 6.5 hours, check the brats and stir to ensure even cooking.
Optionally, grill the brat buns for grill marks and a crispy texture.
Serve the bratwurst with the cooked peppers and onions on the bun.
