1 cup chopped peaches
6 cups peaches
4 1/2 cups sugar
1 package dry pectin

Remove the pit and chop 12 peaches.

Crush 1 cup of the chopped peaches in the bottom of a large saucepan.

Add the remaining peaches and set the pan over medium low heat.

Bring them to a low boil and let them cook for 20 minutes or until the peaches become liquid.

Pour the peaches into a bowl then measure 6 cups back into the pan.

Add 4 and 1/2 cups of sugar and bring to a boil over medium heat.

Gradually whisk in 1 package of dry pectin and boil whisking constantly for 1 minute.

Sterilize canning jars and lids according to the manufacturer's instructions.

Remove from the heat and transfer to sterilized jars.

Process the jars for 10 minutes in a boiling water bath.

Let the peach preserves cool then store for up to 1 year.
