Peach Preserves

4 cups fresh peaches, peeled and chopped
1/4 cup lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/4 cup water
1 1/2 cups granulated sugar
1/2 pouch fruit pectin (1.75 oz)

Peel the peaches using a peeler.

Slice the peaches off the pit, ensuring to keep the juice.

Chop the peaches into medium-sized pieces.

Combine the peaches and sugar in a pot.

Bring the mixture to a boil, then lower the heat and simmer for about 2 hours.

Skim off any foam that forms on top during cooking.

Test the preserves by placing a bit on a plate and freezing it for 5 minutes to check the consistency.

Ladle the preserves into jars, straining off excess liquid if desired.

Wipe the edges of the jars clean and tighten the lids.
