Peach Preserves

4 cups fresh peaches, peeled and chopped
1/4 cup lemon juice
1 1/2 cups granulated sugar

Wash the peaches.

Cut the peaches in half and remove the seeds.

Slice the peaches without removing the skins.

Add lemon juice for acidity.

Add sugar for sweetness to help it gel.

Bring the mixture to a boil and let it cook for about 10 minutes.

Turn off the heat and let it cool completely.

Turn the burner back on and bring it to a boil again for about 5 minutes.

Turn off the burner and let it cool again.

Repeat the heating and cooling process for a total of five times.

Blend the mixture together with an immersion blender.

Bring the blended mixture to a boil for the final time.

Pour the hot jam into hot canning jars.

Place lids and rings on the jars.

Put the jars into the water bath canner for 15 minutes.
