Peach Preserves

4 cups fresh peaches, peeled and chopped
1/4 cup lemon juice
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/4 cup water
1 1/2 cups granulated sugar
1/2 pouch fruit pectin (1.75 oz)

Wash your jars, lids, rings and canning tools with hot, soapy water.

Add 2 cups of water and the steaming trivet to the Instant Pot liner.

Place the jars, lids and rings on the trivet.

Sterilize using the Canning (low) setting for 1 minute with a Quick Pressure Release.

Carefully remove the jars, lids and rings from the Instant Pot and fill with the jars with the warm preserves leaving 1/4 inch of headspace.

Wipe the mouths of the jars to make sure you get a good seal.

Place the lids on the jars and screw on the rings tightly but not as tightly as possible (fingertip tight).

Place the jars back into the Instant Pot and fill the liner with water until it comes up 1/4 of the height of the jars.

Lock the lid and select the Canning (max) setting for 10 minutes.

Select Slow Pressure Release.

After the cook time is finished and it has been on slow pressure release for 5 minutes, manually quick release the rest of the pressure.

Remove the jars from the Instant Pot to a heat resistant surface and allow to cool overnight.

Check to make sure all of the lids have popped down.
