Cut 1 kilogram of chicken breasts into strips and flatten them out.
In a bowl, combine 1 and 1/2 cups of buttermilk, 2 beaten eggs, 1/2 cup of pickle juice or vinegar, and 1/4 cup of hot sauce. Mix well.
Add 1 tsp of salt, 1 tsp paprika, 1/2 tsp chili powder, 1 tsp garlic powder, and 1 tsp black pepper to the mixture. Mix thoroughly and marinate in the fridge for 1 to 6 hours or overnight.
For the dry flour coating, mix 300 g of flour, 150 g of cornstarch, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp chili powder, 1 tsp paprika, 2 tsp salt, 2 tsp cayenne, and 1/2 tsp black pepper. Set aside.
For the hot honey seasoning mix, combine 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp brown sugar, 1 tsp black pepper, 1 tsp cayenne, and 1/4 tsp salt. Set aside.
For the ranch dressing, mix 1/2 cup mayonnaise, 1 cup buttermilk, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp black pepper, 1/4 tsp salt, 1 tsp dill, and 1 tsp chipotle paste. Chill until ready to use.
Remove the marinated chicken from the fridge 30 minutes before cooking to bring it closer to room temperature.
Dredge the chicken in the seasoned flour, then back into the marinade, and finally in the seasoned flour again. Shake off excess flour and set on a tray.
Heat 1 inch of oil to 180° C. Fry the chicken in batches of 4 to 5 pieces at a time for 3 to 4 minutes on each side until golden and crispy.
For the hot honey sauce, mix 1/8 cup of honey, 4 tbsp of butter, 2 tbsp of chipotle sauce, and 1 tsp of cayenne over low heat until melted and smooth. Remove from heat and set aside.
Toast the burger buns.
Assemble the sliders by spreading ranch over the buns, topping with chicken, brushing with hot honey sauce, sprinkling with hot honey seasoning mix, and adding pickles. Cover with the top bun.
