No Knead Focaccia

Traditionally served as a side dish or appetizer, its airy texture and olive oil richness make it a favorite. The no-knead method has gained popularity for its simplicity, allowing home bakers to enjoy fresh focaccia without the labor of traditional kneading.

all-purpose flour

olive oil

Nutritional yeast provides a cheesy flavor without dairy.
Put semolina into a bowl.
Add instant dried yeast and mix.
Pour in warm water and mix again.
Cover and let sit for about an hour.
Check the yeast mixture; it should be bubbling and have a strong smell.
Add plain flour and salt to the yeast mixture and mix.
Make a well in the center and add the yeast mixture, more warm water, and olive oil.
Mix until it forms a wet dough, then cover and leave overnight.
After resting, stir the dough a couple of times with a spatula.
Prepare a baking tray lined with baking paper and oil the bottom.
Transfer the dough into the tray and push it out to the corners with oiled fingertips.
Make indents in the dough with your fingers.
Cover and let sit for an hour.
After an hour, the dough should be puffier.
Mix a tablespoon of olive oil with a tablespoon of water and pour it over the dough, shaking it around.
Sprinkle more salt, fried shallots, and chili flakes on top.
Bake in a hot oven for 15-20 minutes until golden brown.
Remove from the oven and pull out the baking paper.
Slice the focaccia and sprinkle fresh thyme on top while still warm.
