In a saucepan, combine water and butter over medium heat until boiling.
Add flour and salt to the boiling mixture, stirring until a dough forms.
Remove from heat and let cool slightly before adding eggs one at a time, mixing well after each addition.
Stir in vanilla extract until fully incorporated into the dough.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Transfer dough to a piping bag fitted with a star tip.
Pipe 4-inch rings onto parchment paper, then carefully drop them into the hot oil.
Fry until golden brown, about 3-4 minutes per side, then remove and drain on paper towels.
Mix powdered sugar and cinnamon in a bowl.
Dust warm crullers with the sugar mixture before serving.
