Add 115 grams of egg whites to a mixing bowl and let them sit at room temperature.
Sift 140 grams of almond flour into a bowl.
Sift 140 grams of icing sugar into the bowl with the almond flour and mix them together.
Optionally blend the almond flour and icing sugar mixture in a blender to make it smoother, using quick bursts to avoid releasing oil.
In a clean bowl, start whisking the egg whites slowly until they begin to froth.
Gradually add 110 grams of granulated sugar to the egg whites while whisking until it becomes fluffy.
Increase the whisking speed to 6 and continue until stiff peaks form, checking for a glossy appearance.
Once stiff peaks are achieved, gently fold half of the almond flour mixture into the meringue without knocking out the air.
Add the remaining almond flour mixture and fold it in gently, using a washing machine effect to mix.
Add a few drops of gel food coloring and continue folding until the mixture has a lava-like consistency, ensuring not to overmix or undermix.
