Peel and trim the beets, removing tails and cutting them into wedges about half an inch thick.

Add 3 tablespoons of extra virgin olive oil, 12 sprigs of fresh thyme, 2 bay leaves, 4 smashed garlic cloves, 1 teaspoon of salt, and 1/2 teaspoon of pepper to the beets and toss to coat.
