Chop 2 plum tomatoes, 1 green onion, and 1/2 jalapeno.

Add a couple chopped garlic cloves, salt, juice from half a lime, and a drizzle of extra virgin olive oil to the chopped ingredients.

Toss the mixture and refrigerate until the chicken fajitas are done.

Slice 1 large boneless chicken breast into 1 to 2 inch pieces and about an eighth of an inch thick.

Season the chicken with salt, black pepper, chili powder, cumin, and drizzle with 1 tablespoon of olive oil.

In a skillet on medium-high heat, add oil and the chicken, cooking and stirring for 6 to 8 minutes until done, then remove from the pan.

Add the remaining half of jalapeno, minced garlic, and 1 tablespoon of Chipotle Adobo sauce, cooking and stirring for about a minute.

Return the chicken and its juices back into the pan and toss everything together until combined.

Toast flour tortillas in a cast iron skillet.
