Prepare the joconde (almond sponge cake) by whipping eggs and powdered sugar until pale and fluffy.
Fold in ground almonds, flour, melted butter, and egg whites gently.
Spread the batter into a prepared baking pan and bake until golden.
Prepare the coffee syrup by mixing water, sugar, and instant coffee until dissolved.
Make the chocolate croustillant by mixing semisweet chocolate with Paillette Feuilletine.
Prepare the chocolate ganache by heating whipping cream and pouring it over chopped semisweet chocolate, stirring until smooth.
Prepare the coffee buttercream by whipping egg yolks with sugar and water until creamy, then adding instant coffee and softened butter.
Assemble the cake by layering joconde soaked in coffee syrup, coffee buttercream, chocolate croustillant, and chocolate ganache.
Finish with a chocolate glaze on top and let it set.
