2 cups basmati rice
4 cups chicken broth
1 cup diced chicken breast
1 cup diced pineapple
1/2 cup diced bell peppers (red and yellow)
1/2 cup peas (fresh or frozen)
1/4 cup raisins
1/4 cup chopped cashews
2 tbsp soy sauce
1 tbsp curry powder
1 tsp salt
1/2 tsp black pepper
2 tbsp vegetable oil
1/4 cup chopped green onions (for garnish)

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

In a large pot, heat the vegetable oil over medium heat. Add the diced chicken breast and cook until browned, about 5-7 minutes.

Stir in the curry powder, salt, and black pepper, cooking for another minute until fragrant.

Add the chicken broth to the pot and bring to a boil.

Once boiling, add the rinsed rice, diced pineapple, bell peppers, peas, and raisins. Stir to combine.

Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Remove the pot from heat and let it sit, covered, for an additional 5 minutes.
