Cut 1 head of broccoli into florets and transfer to a bowl.
Pour boiling water over the broccoli until completely covered to blanch it.
Cut 4 potatoes into small cubes.
Melt a piece of butter in a frying pan and fry the potatoes until golden brown, sprinkling a little salt over them.
Take a baking container and pour olive oil into it, then layer the golden brown potatoes evenly at the bottom.
Add the blanched broccoli on top of the potatoes.
Cut 10 small champignons and fry them in olive oil in the frying pan.
Chop 1 onion and add it to the frying mushrooms with a pinch of salt, black pepper, and a small piece of butter.
Grate 2 cloves of garlic and add to the frying mixture, cooking for 5 to 10 minutes until fragrant.
Once the mushrooms are ready, place them on top of the broccoli in the baking container.
In a bowl, crack 3 eggs and pour in 1 cup of milk, whisking them together until combined.
Add 4 tablespoons of flour, 1 teaspoon of baking powder, 2 tablespoons of Greek yogurt, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of oregano to the egg mixture and beat until smooth.
Pour this mixture over the casserole in the baking container.
Grate 5 ounces (150 grams) of soft cheese and sprinkle it on top of the casserole.
Add 3 tablespoons of breadcrumbs on top of the cheese to make the crust crispy.
Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius) and bake the casserole for 25 minutes until golden brown and crispy.
While the casserole bakes, prepare a sauce by adding 4 tablespoons of Greek yogurt to a bowl.
Grate 2 pickled cucumbers and add them to the bowl.
Squeeze 1 clove of garlic into the bowl and finely chop 1 bunch of parsley, adding it to the sauce.
Once the casserole is done, remove it from the oven and let it cool for a few minutes before slicing and plating it with the sauce.
