Stir the mixture until combined, adding more warm water if the mixture is too dry.
Knead the dough until it is smooth and velvety, then shape it into a ball.
Cover the dough with a cloth and let it proof for 1 hour in a warm place.
After 1 hour, prepare the biscuit dough by measuring 3 cups of brown bread flour into a bowl.
Add 1 teaspoon of salt, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda to the flour and mix.
Incorporate about 1 cup of grated cheese into the flour mixture, distributing it evenly.
Add 4 tablespoons of cold cubed butter and rub it into the flour until it resembles fine breadcrumbs.
Pour in 4 tablespoons of olive oil and 1-2 tablespoons of vinegar, alternating with ice cold water, mixing until a dough forms.
Avoid overworking the dough to keep it flaky; add more water if necessary.
Once the dough holds together, roll it out thinly on a floured surface.
Cut the rolled dough into desired shapes using a cookie cutter.
Place the cut-out biscuits on a baking sheet lined with parchment paper.
Use a fork to poke holes in each biscuit to prevent air pockets.
Lightly wet the biscuits with water using a pastry brush before baking.
