Preheat the oven to 360°F.

Line a muffin pan with paper liners and keep it aside.

Add 2 eggs to a bowl.

Add 2/3 cup sugar and whisk for 2-3 minutes.

Add 1/2 cup oil and mix well.

Add 3/4 cup milk and mix it well.

Add 1 tsp vanilla essence and mix.

Add 2 cups all purpose flour, 1 tsp baking powder, and a pinch of salt.

Mix until well combined; do not overmix.

Scrape the sides with a spatula.

Divide the batter evenly into the muffin pan.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
