Pasta and Peas

Cultural Context

Pasta and Peas, or Pasta e Piselli, is a traditional Italian dish, particularly popular in the spring when fresh peas are in season. This dish embodies the Italian philosophy of using simple, seasonal ingredients to create comforting meals. It's a staple in many households, often served as a quick weeknight dinner. Today, variations can be found across the globe, with some adding pancetta or cream for richness, while others keep it light and vegetarian.

12 oz Peas, fresh or frozen
1 lb Pasta
1 tbsp Olive oil, plus more for drizzling

parmesan cheese

🥗Healthier: nutritional yeast

💰Cheaper: grated pecorino

Nutritional yeast is lower in calories and dairy-free.

butter

🥗Healthier: olive oil

💰Cheaper: margarine

Olive oil is healthier and can be used for sautéing.

1

Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until the onion has softened and is turning translucent, for about 5 minutes.

2

Add the peas and cook stirring frequently about 1 minute.

3

Then add vegetable broth, raise the heat, bring to a boil and stir in pasta and 1 tsp of salt.

4

Reduce the heat, cover with a lid, and cook your pasta in the starchy water. During the cooking time make sure to stir often until the broth is absorbed, if not it will stick to the bottom.

5

The broth should barely cover the pasta, but it's fine, add extra broth gradually only if needed.

6

Cook until ready but firm to the bite.

7

Turn off the heat and stir in freshly grated parmesan cheese until melted. Taste and adjust the seasoning.

8

Serve immediately with a drizzle of olive oil and extra parmesan cheese if you like. ENJOY!
