Break the stem ends off of the snow peas and pull off the strings.
Boil the snow peas.
Slice a block of konnyaku into seven millimeter thickness and make an incision in the center, then twist one end of the konnyaku.
Boil the konjac with the water that boiled the snow peas.
Peel and cut taro roots, carrot, and lotus roots using vegetable carving techniques or cut everything into bite-size wedges.
Slice chicken thigh into thin slices.
Pre-boil taro roots and potatoes by sprinkling a teaspoon of salt over the potatoes and adding water.
Bring it to a boil and pre-boil the taro roots for about 1 minute.
Drain the water and wash the potatoes under running water to remove the sticky texture.
Add sesame oil to a pot and heat over medium-high heat.
Cook chicken first until it becomes whitish in color, then transfer the chicken to a strainer.
Add vegetables to the pot and cook lightly, then transfer the vegetables to the strainer.
Pour hot boiling water over the chicken and vegetables to remove excess fat.
Add dashi soup stock to a pot and bring it to a boil.
Add sugar, sake, mirin, and soy sauce to the pot.
Combine chicken and vegetables with the soup.
Cut a piece of parchment paper to the size of the pot and place it on the vegetables to prevent evaporation.
Cook for about 8 minutes, then stir the vegetables and cook for another 6 minutes until the soup has reduced to 1/3 of the original amount and vegetables are tender.
Serve on a plate and garnish with snow peas.
