Remove the top of the shiitake mushroom and cut in half.

Peel the carrots, cut them in half, and roughly chop them.

Process the lotus root in the same way as the carrots.

Scrape the skin off the burdock root with the back of a knife, cut into pieces of appropriate size, and soak in water.

Cut the konnyaku into appropriate size pieces with a spoon and soak in hot water.

Cut the chicken thighs into bite-sized pieces.

Add a little oil to a frying pan, add the lotus root, carrots, and burdock root, and fry for about 3 minutes over medium-low heat.

Add the chicken thighs and sear the surface.

Add soy sauce, mirin, sugar, and water to the pan and simmer for about 1 minute.

Add the shiitake mushrooms and konnyaku, cover, and simmer for 10 minutes.
