1

Measure 1 pound of pig's tail cut into chunks.

2

Peel and chop a piece of ginger the size of your index finger.

3

Chop 1 Scotch bonnet pepper, small to medium size.

4

Chop 1/4 onion and 2-3 scallions.

5

Prepare 6-8 garlic cloves by peeling them.

6

Measure 1 tablespoon of dried parsley and 1.5 tablespoons of dried basil.

7

Measure 2-4 cloves and 1 teaspoon of rosemary.

8

Measure 0.5 teaspoon of oregano and 1 teaspoon of thyme.

9

Measure 1 teaspoon of marjoram and chop 1 small tomato.

10

Wash 1 cup of red kidney beans in a mixture of water and 1 tablespoon of white vinegar, then rinse.

11

Soak the beans in enough water to cover them for 15-30 minutes to release gas and aid in tenderizing.

12

Prepare dumpling dough by mixing flour and water, adding a pinch of salt for flavor, and adjusting the consistency as needed.

13

Peel and chop the garlic cloves and set aside.

14

Boil the pig's tail in water for 1 minute to remove excess salt, then rinse.

15

Repeat the boiling and rinsing process 2-3 times to ensure the salt is removed.

16

Pressure cook the soaked beans for 8-9 minutes and the pig's tail for 6-7 minutes, adding 6 cups of water to the pressure cooker.

17

After pressure cooking, allow the pressure to release naturally, then rinse the pig's tail under running water to retain flavor.

18

Combine the cooked beans and pig's tail in a pot, adding any additional seasonings as needed.
