Instructions

- 5Mix cornstarch with water in a small bowl until smooth.

- ●2 tbsp lemon juice
- ●1 tsp salt

Instructions
- 1Rinse the pearl barley under cold water and drain.
- 2In a medium saucepan, combine the rinsed barley and vegetable broth. Bring to a boil over medium-high heat.
- 3Once boiling, reduce the heat to low, cover, and simmer for about 30-35 minutes, or until the barley is tender and the liquid is absorbed.
- 4While the barley is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
- 5In a large bowl, combine the cooked barley, cherry tomatoes, cucumber, red onion, and parsley.
- 6In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
- 7Pour the dressing over the barley and vegetable mixture, and toss gently to combine.
- 8Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
- 9Serve the barley bowl warm or chilled, garnished with additional parsley if desired.
