1 cup frozen corn
1/2 cup Greek yogurt
1 egg
1/2 cup 2% milk
1 tablespoon maple syrup
1 cup gluten-free flour
1/2 cup oat flour
1 teaspoon baking powder
1 teaspoon fresh rosemary
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 cup grated cheddar cheese

Chop onions, carrots, celery, and mushrooms for the mirepoix.

Preheat a large frying pan over medium heat and add olive oil.

Sauté onions, celery, carrots, and mushrooms for 5 to 7 minutes until softened.
