1 stick melted butter
1 rotisserie chicken
12 ounces frozen mixed vegetables
poultry seasoning
2 cups low-sodium chicken broth
1 can cream of chicken soup
2 1/4 cups biscuit mix
1 1/4 cups 2% organic milk
1 cup shredded cheddar cheese
pepper to taste

Preheat the oven to 400 degrees.

Melt 1 stick of butter and pour it all over the bottom of a baking pan.

Cover the bottom of the pan with rotisserie chicken.

Add a 12-ounce bag of frozen mixed vegetables on top of the chicken.

Sprinkle poultry seasoning over the vegetables.

Pour in 2 cups of low-sodium chicken broth.

Add a can of cream of chicken soup and pour it over the top.

In a bowl, mix 2 1/4 cups of biscuit mix with 1/2 cup of 2% organic milk until combined.

Add another 3/4 cup of milk to the biscuit mixture and stir until it becomes liquidy.

Pour the biscuit mixture over the chicken and vegetable layer without mixing it in.

If desired, add a second pack of biscuit mix for a thicker topping and adjust the milk accordingly.

Bake in the preheated oven for about 45 minutes to 1 hour, checking for doneness.
