Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup buffalo sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. 1In a large pot, heat the olive oil over medium heat.
  2. 2Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
  3. 3Add the ground chicken to the pot, cooking until browned and cooked through, about 7-10 minutes.
  4. 4Stir in the kidney beans, black beans, diced tomatoes, chicken broth, buffalo sauce, cumin, chili powder, salt, and black pepper.
  5. 5Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes, stirring occasionally.
  6. 6Taste and adjust seasoning if necessary, adding more buffalo sauce for extra heat if desired.
  7. 7Serve hot, garnished with chopped green onions and shredded cheddar cheese if using.
