Preheat the oven to 350°F (175°C).
Cut the melon in half and remove the seeds.
Scoop out some of the flesh to create a small well.
Place the melon halves in a baking dish, cut side up.
In a bowl, mix brown sugar, cinnamon, nutmeg, and salt.
Add melted butter and vanilla extract to the mixture and stir well.
Spoon the mixture into the wells of the melon halves.
Drizzle lemon juice over the filled melon halves.
Cover the baking dish with aluminum foil.
Bake in the preheated oven for 25-30 minutes until the melon is tender.
Remove the foil and bake for an additional 10 minutes to caramelize the topping.
Let cool slightly before serving.
