Vegetarian Empanadas

Cultural Context

Originating from Spain, empanadas were brought to Latin America by Spanish colonizers. In Argentina, they became a beloved staple, often filled with meats, but vegetarian versions celebrate local produce and flavors. Traditionally enjoyed during gatherings and celebrations, these pastries have evolved globally, with various fillings reflecting regional tastes.

1

Prepare the empanada crust by mixing all-purpose flour, cold butter, salt, and water to knead the dough.

2

Roll out the dough and cut into circles, dusting with flour as needed.

3

In a skillet, heat oil and sauté garlic paste and chopped onion until translucent.

4

Add diced red and green bell peppers, green chili, and boiled corn; cook until softened.

5

Mix in the washed and cut spinach and season with salt, chili flakes, and mixed herbs; cook until spinach is wilted.

6

Remove from heat and let the filling cool slightly before adding grated processed cheese and crumbled cottage cheese.

7

Place a spoonful of filling in the center of each dough circle.

8

Fold the dough over the filling to create a half-moon shape and press edges to seal.

9

Brush tops with milk for a golden finish if baking, or heat oil for frying.

10

Arrange empanadas on a baking sheet if baking, or prepare for frying.
