Preheat the oven to 375°F (190°C).
Grab a can of pumpkin puree and add it to a large bowl.
Add 2 eggs to the bowl and whisk everything together.
Spray a measuring cup with cooking spray for easy pouring, then add maple syrup (or honey/agave).
Add a little bit of avocado oil to the mixture.
Add homemade pumpkin pie spice, baking powder, baking soda, and salt to the bowl and whisk until smooth, ensuring no lumps remain.
Measure spelt flour by scooping it into a measuring cup and leveling it off, then add it to the bowl.
Gently stir the flour into the mixture, leaving some white flour patches for a better muffin texture.
Set the batter aside and prepare the muffin tin with liners, spraying them for easy cleanup.
Divide the batter between the 12 muffin openings using a cookie scoop or ice cream scoop.
Make an indent in the center of each muffin for the cream cheese, adding between 1 teaspoon to 1 tablespoon per muffin.
Optionally, add a few pumpkin seeds on top of each muffin and sprinkle with cinnamon or pumpkin pie spice.
Bake the muffins for 20 minutes, checking with a toothpick to ensure they come out clean.
