Select two coconuts, one brown and one white, based on preference.
Test the coconut for freshness by checking the clarity of the eyes, weight, and sound of water inside.
Crack open the coconut using the back of a heavy chopper, going around the shell.
Use a butter knife to carefully remove the coconut from the shell, trying to keep the shell intact for presentation.
If needed, use a spoon to scoop out the coconut meat more easily.
Roast the coconut pieces over an open flame, turning them frequently to achieve a nice char.
Once roasted, scrape off the charred bits from the coconut pieces to clean them.
Place the roasted coconut into a food processor and blend until smooth, adding green mango to taste.
Transfer some of the blended coconut into a mortar and pestle to grind further for a finer texture.
Add hot pepper to the mortar and pestle during the grinding process for flavor.
Add salt to taste and mix everything together using clean hands to combine well.
