Kelly Cooks: Butter & Herb Roasted Chicken

Preheat the oven to 400°F.

In a baking dish, place chopped onions and carrots at the bottom.

Smash a clove of garlic with a knife and add it to the baking dish.

Lay the whole chicken on top of the vegetables in the baking dish.

Season the chicken with salt and pepper.

Prepare the herb butter by mixing together 2 tablespoons of room temperature butter, 1 clove of minced garlic, 1/2 teaspoon of chopped sage, 1/4 teaspoon of chopped rosemary, 1/8 teaspoon of thyme leaves, 1/2 teaspoon of kosher salt, and 1/8 teaspoon of black pepper.

Rub the herb butter under the skin of the chicken and on the outside of the chicken.

Place the chicken in the preheated oven and roast for about 1 hour, checking that the internal temperature reaches 165°F.
