Grab two cups of Greek yogurt and add 1/4 cup of orange juice, 2 tbsp of lemon juice, and 2 tbsp of lime juice.
Add a finger sized piece of ginger and a finger sized piece of turmeric, both unpeeled.
Add two cloves of finely chopped garlic and about a half a chili.
Add 1 tbsp of coriander seed, 1 tbsp of cumin seed, and 1 tsp of fennel seed, toasting them separately before adding to the marinade.
Add 1 tbsp of za'atar, 1 tbsp of pink peppercorn, and 1 tbsp of curry powder, then blend until smooth to make the marinade.
Prepare the chicken by cutting out the backbone and splitting it in half, saving the backbone for chicken stock.
Marinate the chicken in a cryovac bag for at least 3 to 6 hours or overnight in the fridge.
Make a citrus glaze by sautéing one clove of garlic in a couple tablespoons of avocado oil, adding chili to taste.
Add 1 cup of fresh squeezed orange juice, 1/2 cup of lemon juice, 2 tsp of lime juice, 1/2 cup of water, and 1/4 cup of sugar to the sautéed garlic and chili.
Add a few glugs of cherry vinegar and let the mixture cook down until reduced by half, skimming off any foam.
Make a slurry with cornstarch or potato starch to thicken the glaze and set aside.
Prepare a shirazi salad by slicing four Persian cucumbers, two heirloom tomatoes (removing seeds), and 1/2 red onion finely.
Add the juice of two lemons, 1 tbsp of dried mint, 1 tbsp of za'atar, salt, pepper, and a few glugs of sherry vinegar to the salad.
Drizzle with good quality olive oil and mix in a handful of fresh parsley.
Pop the marinated chicken in the air fryer at 365°F, starting skin side down for about 30 minutes, then flipping it skin side up for another 10 to 15 minutes.
Check the temperature after cooking to ensure it's done.
