8 oz carrots, peeled and sliced
8 oz collard greens, thinly sliced
3 TB apple cider vinegar
½ tsp salt

Preheat the pot to the highest sauté setting and add the bacon when the display reads 'HOT.' Cook, stirring once or twice, until the bacon is fully crisped and the fat has rendered out.

Add the chopped onion and cook, stirring once or twice, until just softened.

Add garlic, bay leaves, black pepper, and red pepper flakes. Cook, stirring continuously, for just another minute.

Pour in 1 cup chicken broth to deglaze the bottom of the pot, scraping up any stuck-on browned bits.

Add black-eyed peas, ham, carrots, and remaining 7 cups chicken broth. Stir to evenly distribute the ingredients.

Layer the collard greens on top and press down into the liquid without stirring up the bottom.

Lock and seal the lid and cook on high for 20 minutes followed by a natural pressure release.

Discard bay leaves. Stir in apple cider vinegar and taste. Add salt if needed according to your tastes.
