Clean the mondongo by removing excess fat with your hands.

Wash the mondongo with hot water.

In a pressure cooker, add the mondongo and cover it with hot water, without adding salt, and cook for 40 minutes once it starts to whistle.

While the mondongo cooks, chop the pierna de cerdo into small cubes and season with salt.

Peel and chop the yuca, potatoes, and a piece of zanahoria.

Prepare the pimentón by removing seeds and membranes, and chop it.

Chop the cebolla larga and cebolla de huevo into small pieces.

After 40 minutes, release the pressure and check if the mondongo is tender; if so, remove it to cool.

In a separate pot, add the broth from the mondongo, yuca, potatoes, zanahoria, cebolla, pimentón, and garlic, and bring to temperature.

Add the chopped pierna de cerdo and mondongo to the pot.

Add two cubes of caldo de costilla and one cube of caldo de gallina (optional) and stir.

Add enough water to cover the ingredients and bring to a boil.

Add approximately one tablespoon of paprika and freshly ground black pepper.

Cover the pot and wait for it to boil vigorously, then taste for salt.
