1

Wash the tripe thoroughly, using gloves to avoid the strong odor.

2

Soak the tripe in water with lime juice for 15 minutes.

3

In a pot with boiling water, add the tripe and lime juice; cook for 20 minutes to neutralize odors.

4

Remove the lime peels and rinse the tripe to eliminate excess flavor.

5

In a pressure cooker, add the tripe, water, pieces of green onion, half a head of onion, three cloves of garlic, a piece of bell pepper, thyme, bay leaves, and salt; mix well and cook for one hour over medium heat.

6

In a skillet, heat oil and sauté chopped green onion, onion, garlic, and bell pepper with salt, garlic powder, paprika, and black pepper until the onion is translucent.

7

Add tomato and sauté until all ingredients are cooked.

8

After 60 minutes, open the pressure cooker and remove the herbs and onions, keeping only the water with the tripe.

9

Add diced vegetables (green onion, carrots, yellow potatoes, black potatoes, peas), a bit of paprika, and garlic; mix and cook for another 30 minutes until the vegetables are tender.

10

Serve the soup topped with the sautéed mixture and finely chopped cilantro, alongside white rice and fried plantains.
