Add 2 cups of good-quality vegetable stock, preferably homemade.

Add 1 small onion halved, 1 carrot roughly chopped, a punnet of cherry tomatoes, 1 red capsicum with stem and seeds removed, half a stalk of celery, 2 garlic cloves, and a thumb of ginger.

Add spices: 1.5 teaspoons of ground cumin, 1 teaspoon of sweet paprika, 1/2 teaspoon of ground coriander, 1/2 teaspoon of ground cinnamon, a pinch of cayenne or chili powder, and 1/2 teaspoon of salt.

Add homemade yogurt for extra creaminess if desired.
