Gather the ingredients for about 4 people: 8 cherry tomatoes, washed and dried, 1 garlic clove, 4 fresh basil leaves, 1 tablespoon extra virgin olive oil, and a pinch of salt.

Mix the cherry tomatoes, garlic, basil, olive oil, and salt together, cover, and refrigerate overnight.

Prepare the ham and cheese mousse by mixing 4 slices of ham with 80 g cream cheese, either by hand or blending them together. Store in the fridge until ready to use.

Preheat the oven to 170 °C (340 °F) and line a big baking tray with parchment paper.

Place spoonfuls of 150 g grated Parmesan cheese on the parchment paper, spaced 4-5 cm apart.

Bake in the oven for a few minutes until the cheese starts to bubble and gets a little color around the edges, but avoid letting them get too crunchy.

Remove the tray from the oven and let the Parmesan discs cool for about 10 seconds before removing them.

Carefully shape the warm Parmesan discs into baskets by placing them in a muffin pan and allowing them to cool completely.

Repeat the process with the remaining Parmesan cheese until all is used.

Once the Parmesan baskets are ready, fill them with the tomato or ham and cheese mixture, or your choice of fillings.
