Put 1 gallon of water into a two-gallon stock pot.

Raise the temperature of the water to 155°F (68°C).

Place the unmilled Crystal malts in a plastic bag.

Mill the grains in the plastic bag using a rolling pin, crushing them to expose more surface area without turning them into powder.

Place the milled grains inside a muslin grain bag and tie a knot in the bag.

Put all hops into a tea bag or tea ball for straining.

Once the water reaches 155°F, add the grain bag to the water and stir to fully saturate the bag.

Let the grains steep for 1 hour off the heat.

After an hour, remove the grain bag and strain it to extract color and flavor.

Raise the heat to bring the water to a boil.

Slowly add the dry malt extract while stirring to dissolve it completely, avoiding clumps that could burn on the bottom.

Watch for the hot break, which is when proteins rise to the top as it starts to boil, and manage the temperature to prevent boil overs.
