Jam donuts, also known as jelly donuts or Berliner, have roots in various cultures, notably in Germany and Jewish traditions. They are often enjoyed during celebrations such as Hanukkah, symbolizing the miracle of oil. Today, they are a beloved treat in many countries, often filled with various flavors of jam or custard, and are a popular choice at fairs and bakeries.

Fruit preserves often contain less sugar.
Warm 440 ml of milk until it is just tepid, about blood temperature.
Melt 100 grams of butter into the warm milk.
Add 75 grams of caster sugar and 4 eggs to the milk and butter mixture.
Dissolve 20 grams of fresh yeast into the mixture, creating a smooth yeasty soup.
Make a well in 600 grams of flour and pour the yeasty mixture into the well.
Mix until a soft batter forms, which is different from a traditional dough.
Cover the batter with cling film or a cloth and let it proof in a warm spot for about 45 minutes to an hour.
Heat vegetable oil in a deep fryer to 165-170 degrees Celsius.
Using your hands, scoop small nuggets of the batter into the hot oil.
Fry the donuts for about 3-4 minutes until cooked through and golden brown.
Remove the donuts from the oil and coat them in caster sugar mixed with lavender flowers.
Fill each donut with jam using a piping bag, making a hole and adding plenty of jam.
