Greek yogurt reduces calories while maintaining creaminess

Peel and cut the potatoes in half.

Grate the potatoes using a grater or food processor.

Strain off excess water from the grated potatoes.

Pour the potato water into a cup and set aside the sediment (starch).

Add the starch back to the grated potatoes.

Mix in salt and sugar.

Replace the amount of potato water with buttermilk and mix well.

Sprinkle plain flour over the mixture and combine until fully mixed.

Heat olive oil and a knob of butter in a hot pan.

Add about 6 dessert spoons of potato mixture to the pan and spread it out.

Cook for about 3 to 4 minutes until the edges look drier and slightly lift from the pan.

Flip the pancake and cook for another 1 to 2 minutes until golden brown.
